For a century, Vermilion has set its tables in white linen and quiet gold light along South Sixth Street — a Springfield institution where dinner is unhurried and every detail is considered.

We carve our prime beef dry-aged in-house, pour from a cellar of old-world wines, and keep faith with the rituals that have welcomed guests since 1924.

Aged in House, Poured from the Vault

Our beef is dry-aged on the premises for up to forty-five days, drawing out a concentration of flavor that no shortcut can imitate. The result is the cornerstone of every plate we send to the table.

Below the dining room rests a cellar of more than six hundred labels — old-world estates and rare verticals chosen to meet the steak as an equal. Our sommelier is glad to find the right bottle for your evening.
